A super healthy and delicious lunch.

Not mine, just an example
Ingridients:
raw tortillas- cooked on skillet, no butter or anything else that would taint there flavor!
1 can black beans (I rinse mine to get rid of the extra junk they're sitting in)
1/4 red onion, chopped into salsa sized bites- I use a lot b/c I loves me some onion
cucumber, also chopped to salsa sized bites- to your liking
tomato, also chopped to salsa sized bites- lots!
avocado-to your liking, I like a lot!
lettuce (I prefer green leaf or romaine, as they are heartier lettuces)-to your liking
lemon (real and fresh, not from a bottle)- half a lemon squeezed
cumin-to your liking, I like a lot
fresh cilantro-loads of it! I love cilantro!
salt and pepper-about 2 hints
garlic (fresh- not dry)-to your liking
chili powder-to your liking
cinnamon-just a hint
graded cheese (this is my non-healthy cheat, just a little though!)

Chop and combine! Mix the avocado all around as a sort of delicious glue. Everything must be fresh, except for the cumin, chili powder, beans ( they're canned...), salt and pepper, and cinnamon.

DO NOT COOK ANYTHING BUT THE TORTILLAS and cheese. I cook one side of the tortilla, toss on a little cheese, and add everything else cold. Every time your process food (aka heat or cool it) it loses nutrients), so eat as much of it fresh and raw as possible. Also, feel free to add any veggies or peppers to your liking! Make your own. Personally though, I'd avoid meat (this isn't a meat dish, it's all about the flavors of everything else and meat tends to boss the other flavors around), corn (our bodies don't digest corn that well- but if you are going to have it, get it fresh on the cob and just cut it off raw, it tastes divine!!!), sour cream, too much cheese, or anything else that would distract from the amazing flavors already in the dish. That last line was a bit redundant...oh well.
P.s. Cucumbers aren't especially in season :( ....but I just loooooove them!!!

Delicious things.

Cupcake Brigade. Make cupcakes, deliver, visit- spread the love. PS. Aren't my trays AWESOME!!?! Bear and galloping stallions, yes.
Homemade tomato pasta sauce? YES. What should you do when you are gifted dozens of tomatoes, yellow squash, and zuchinni from friends and loved ones (their personal gardens no less?!)? Make pasta sauce! 
Ingredients:
-Lots of tomatoes of all kinds- fresh. Buy them, but don't use sissy canned junk.
-Garlic to taste, also fresh of course- non of that dry or canned junk. It's not that hard or exspensive to buy some real live garlic bulbs and toss some in- you don't have to cut them, just take the skin/husk whatever off (And luckily, the tomato and lemon from the pasta and hummus recipes gets rid of garlic on your fingertips)
-Zucchini- lots! Raw, and you can toss big chunks in because it's so soft- so there's minimal prep.
-Yellow squash! I don't like steaming these beasts, they're too tough, and it depletes the nutrients. Solution- blend them raw, into a tiny pulp in your pasta sauce!
-Italian seasoning or fresh herbs to taste
-Pesto. I LOVE PESTO. So naturally I put some heaping spoons in my sauce!
-Olive oil...to taste (can you tell? I don't measure things).
-A little bit of purple onion- because I love it!
Blend the mother to a cream! Food processors work good, as do blenders. Mix it and put it in jars (because I know you all keep your glass jars in piles around your house- because you'll find a use for them sometime...just like me!) 
WARNING. If you freeze your sauce, like me, don't fill it to the top- it will expand and break the glass!
What's great about this recipe- no need to cook until you heat it for eating. Boiling the contents and then cooking them again removes all of the nutrients. If you make this raw recipe you can heat it up for a few seconds when you're ready to eat- and viola! Amazing, healthy spaghetti...lasagna, etc.
Note on freezing: Anytime you process food it looses nutrients, except for a few foods which need minimal processing. Heating, cooling, reheating....it takes some good every time. I freeze my sauce so I can take it out a jar at a time for use, thus preventing mold and all that. So it's okay to process it a bit, I mean, at least it's not store bought processes, but beware or over doing it.

Pesto Hummus:





-Garlic to taste, but careful not too much.
-Tahini, I put in a heaping spoonful- I bought mine at a Thai store, you can usually find it at health food stores
-Pesto. Like I said, I LOVE PESTO!
-Olive oil.
-Garbanzo beans, drained (chickpeas, whatever).
-Squeeze of lemon.
-Dash of cumin and coriander.

BLEND THE MOTHER TO A CREAM! 
Eat with pita, creating the perfect protein!
Fun add-in: cucumber, artichoke hearts- anything you desire! Hummus is great because you can make a lot of flavors. Pesto just happens to be my favorite.  
PS. Both featured recipes take about 10 mins. or less.

Yummy things!

I think I think about food too much...haha! Well I wanted to share some more yummy foods that I've made recently- both are cost conscience concoctions.

The first are homemade granola bars! I eat a lot of granola bars and usually I just buy the Quaker smores one, but they’re loaded with junk and sugar and they really add up when you buy them all of the time. So I googled and combined my findings. This is what I came up with:
-Wheat germ (organic bulk bins-aka, super cheap!)
-6 grain oats (organic bulk bins-aka, super cheap!)
-Dark carob chips (no sugar or junk alternatives to chocolate chips! Also from the organic bulk bins)
-Utah made organic honey (organic bulk bins-aka, super cheap!)
- Fresh crushed in the store peanut butter (organic bulk bins-aka, super cheap!)
- Sundrops (no artificial colors, flavors or preservatives. Their color comes from beet juice, beta carotene and natural caramel. Their chocolate centers are made with rich milk chocolate, sweetened with evaporated cane juice and a touch of unsulphered molasses, organic bulk bins-aka, super cheap!)
-organic brown sugar (organic bulk bins-aka, super cheap!)
-organic butter
You can basically add whatever you want! Dried berries, nuts etc. Just boil the sugar, peanut butter and butter and pour that over everything else. Spread out flat and let cool and cut into bars (or be lazy and break in random chunk and put into a Ziploc:)) YUMMY! They taste like no bake cookies, or as my family calls them- poop cookies, but think they've got to be healthier than those smore bars I was sucking down every day! Oh yeah, I didn't really measure, I just tossed a bunch in so I would have a lot!!!

Next- turkey cilantro meatballs.

Okay, I've been wanting some serious meat lately, but meat is super exspensive! So last night I bought some jenny-O ground turkey. It cost about 2 bucks and it has all sorts of possibilities!

-Fresh cilantro (costs about a buck)
-Cumin
-Fresh garlic (super cheap, even the organic stuff)
-Cinnamon
-Chili pepper

With your hands massage all of the spices and ripped up cilantro leaves in a bowl until well blended. Form into balls shapes and plop into a pan with grape seed oil and fresh cut onion. Cook until inside and out is brown. You could eat these in tacos, burritos or any Latin dish, but I put mine on a big bed of lettuce and kidney beas with some fresh made cilantro ranch dressing (tons of fresh cilantro, ranch-coyote ranch from Utah is the best- but it’s fattening, water or milk, a tiny bit of garlic and lime or lemon if you want- but the acid tends to curdle the dairy).
